Classic Tiramisu Recipe (Serves 20)
Tiramisu is a traditional Italian dessert known for its layers of coffee-soaked ladyfingers, rich mascarpone cream, and a dusting of cocoa powder. It’s a beautifully balanced dessert with a slight bitterness from the coffee and cocoa, complemented by the sweetness of the cream and a hint of liqueur.

Cooking Instructions:
- Prepare the Coffee Mixture:
- Brew 600 ml of strong coffee and let it cool.
- Add 200 ml of coffee liqueur to the cooled coffee (if using). Set aside.
- Prepare the Mascarpone Cream:
- In a large bowl, whisk 12 egg yolks and 300 grams of granulated sugar until the mixture is pale and creamy.
- Add 1000 grams of mascarpone cheese and continue whisking until smooth.
- In another bowl, whisk 600 ml of heavy cream with 2 teaspoons of vanilla extract until soft peaks form.
- Gently fold the whipped cream into the mascarpone mixture until fully combined.
- Assemble the Tiramisu:
- Dip each ladyfinger (500 grams) briefly into the coffee mixture, making sure not to soak them for too long to avoid sogginess.
- Arrange a layer of soaked ladyfingers at the bottom of a large baking dish (approx. 33×23 cm).
- Spread half of the mascarpone cream over the ladyfingers.
- Add another layer of soaked ladyfingers, followed by the remaining mascarpone cream.
- Chill the Tiramisu:
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to let the flavors meld.
- Serve and Garnish:
- Before serving, dust the top with 50 grams of unsweetened cocoa powder using a fine sieve.
- Optionally, sprinkle 50 grams of grated dark chocolate for extra indulgence.

Allergens:
- Eggs, Dairy (Mascarpone, Cream), Gluten (Ladyfingers)
Here is how we could make it better:
- Gluten-Free: Use gluten-free ladyfingers.
- Alcohol-Free: Skip the coffee liqueur and use a bit more coffee for soaking the ladyfingers.
- Lower Sugar: Reduce the sugar to 200 grams in the mascarpone cream for a less sweet version.
This is how you could plate it:
- Serve each slice of tiramisu with a dollop of whipped cream on the side.
- Garnish with extra cocoa powder, a chocolate curl, or a few coffee beans.
- Pair with a small espresso or dessert wine like Vin Santo for a complete experience.
Enjoy your delicious tiramisu!
