Ingredients:

    For the Bolognese Sauce:

    • · 2 tbsp olive oil
    • · 1 onion finely chopped
    • · 2 carrots finely chopped
    • · 2 celery stalks finely chopped
    • · 2 garlic cloves minced
    • · 1 lb around 500 grams ground beef
    • · 1/2 lb around 250 grams ground pork
    • · 1 cup dry red wine
    • · 1 can 28 oz crushed tomatoes
    • · 1/4 cup tomato paste
    • · 1 tsp dried basil
    • · 1 tsp dried oregano
    • · Salt and pepper to taste
    • · 1/4 cup whole milk

    For the Spaghetti:

    • · 1 lb around 500 grams spaghetti
    • · Salt
    • · 2 tbsp olive oil

    To Serve:

    • · Grated Parmesan cheese
    • · Fresh basil leaves torn

    Instructions

    Method:

      Step 1 - Preparing the Bolognese Sauce:

      • · In a large saucepan, heat the olive oil over medium heat. Add the onion, carrot, and celery, and cook until the vegetables are soft, about 10 minutes.
      • · Add the garlic, beef, and pork to the pan. Cook, breaking up the meat with a spoon, until browned.
      • · Add the red wine to the pan. Cook until the wine has reduced by half, about 5 minutes.
      • · Stir in the crushed tomatoes, tomato paste, basil, oregano, and a pinch of salt and pepper. Bring the mixture to a simmer.
      • · Reduce the heat to low, cover the pan, and let it simmer for at least 2 hours. The longer the sauce cooks, the richer the flavors will be.
      • · Stir in the milk and cook for another 10 minutes. This is your Bolognese sauce.

      Step 2 - Cooking the Spaghetti:

      • · While the sauce is simmering, prepare the spaghetti.
      • · Bring a large pot of salted water to a boil.
      • · Add the spaghetti and cook until al dente, following the package instructions.
      • · Drain the spaghetti and toss it with the 2 tbsp of olive oil to prevent it from sticking together.

      Step 3 - Serving:

      • · To serve, divide the spaghetti among serving plates.
      • · Top with a generous amount of Bolognese sauce, a sprinkle of grated Parmesan cheese, and a few torn basil leaves.
