    • 1 cup 200g of granulated sugar
    • 2 large eggs
    • 1 teaspoon of pure vanilla extract

    For the Toffee Sauce:

    • 3/4 cup 170g of unsalted butter
    • 1 1/2 cups 330g of brown sugar
    • 1 cup 250ml of heavy cream
    • 1/2 teaspoon of pure vanilla extract

      Step 1. Preheat the Oven and Prepare the Dates

      • Preheat your oven to 350°F (175°C). Grease a baking dish with butter. In a small bowl, add the chopped dates and boiling water. Stir in the baking soda and set it aside for about 10 minutes.

      Step 2. Prepare the Pudding Batter

      • In a large bowl, whisk together the flour, baking powder, and salt. In a separate bowl, beat the butter and granulated sugar until creamy and light. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
      • Gradually add the flour mixture to the butter mixture, stirring until just combined. Now add the date mixture (including the water) and stir until combined. The batter will be quite liquid - that's okay!

      Step 3. Bake the Pudding

      • Pour the batter into your prepared baking dish. Bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.

      Step 4. Prepare the Toffee Sauce

      • While the pudding is baking, start preparing the toffee sauce. Melt the butter in a saucepan over medium heat. Add the brown sugar and cream, stirring until the sugar has dissolved. Bring the mixture to a boil, then reduce the heat and let it simmer for about 5 minutes, until the sauce thickens slightly. Stir in the vanilla extract.

      Step 5. Serve the Sticky Date Pudding

      • Once the pudding is done, remove it from the oven and poke holes all over the top with a skewer. Pour half of the toffee sauce over the pudding, allowing it to seep into the holes.
