· Choose ripe Roma tomatoes, cut off their tops, and dice them into small cubes. If you want less juice and seeds, scoop out the insides before dicing.
· Rinse fresh basil leaves under cool water, pat them dry, and finely chop them.
· In a large bowl, combine diced tomatoes, chopped basil, minced garlic (leave one clove for later), olive oil, and balsamic vinegar. Stir well.
· Add salt and pepper to taste, then stir again.
· Allow the mixture to sit at room temperature for about 30 minutes to let the flavors meld together.
